The Fiestas del Ángel is the most deeply-rooted festival in the city of Teruel. Dedicated to the Santo Ángel Custodio, patron saint of the city, they commemorate the legendary foundation of Teruel by some Aragonese knights after taking the Muslim fortress to which they were led by a fierce bull.

The most archaic celebration is the "toro ensogado", which runs through the streets between the "quiebros" of the young men on Monday. Although the "Puesta del Pañuelico" is the best known event, the "Quita del Pañuelico" and the different musical performances of the peñas are the most famous and most popular events.
